The Perbacco is made entirely from parcels in the Barolo region (average age of the vines is 35 years). The work in the vineyards and cellar are the same for the Perbacco and the Barolo Castiglione - the only difference being the length of aging.
All vineyards are vinified and aged separately. The wine ages around 2 years: 4 months in barriques (during which time natural malolactic fermentation occurs), and 20 months in big casks. The wine then sits 2 months in stainless steel tanks before the bottling.
